Bring Back Real Ital Stew

Ital Stew
1 lb. Broad Beans (Lima)
1 Coconut
12 or so fresh Okra
1 Scotch Bonnet Pepper (Habanero)
1 lb. Yukon Gold Potatoes
1 lb. Yellow Yams
1 lb. Jamaican Pumpkin (Buttercup squash)
1 medium ripe Plantain
1 bunch of thyme
1 bunch of green onions
2 small coco’s
Directions:
Crack open, peel and grate the coconut. Squeeze the “milk” and water out
of the coconut and then strain it to make sure there are no strands in the
liquid.
Add the coconut milk to one large pot of boiling water and boil the lima
beans for an hour. It’s good to have his done beforehand. When the beans
are boiled,
add the yellow yam, potatoes and squash, which should all be chopped up into
nice bite sized pieces. Next, add the scotch bonnet pepper. Throw it in there
whole, so that it can work its magic. Add a handful of the fresh thyme and
the okra and lastly throw in the green onions. Let the stew boil and then
simmer it, so that it “melts” down. There you go; it’s ready to serve up.
