The Secret to Ochazke

Recipe: Ochazke
3 cups green tea
3 cups cooked brown rice
1 or 2 strips of Kombu
2 strips of wakame
1 block of tofu (we use smoked)
2 sheets of nori
ume Japanese plums
1 bunch of bok choy
1 onion
mirin
salt and pepper
Directions:
Boil the Kombu and wakame in water with a small amount of mirin to make a
broth. using the boiling broth steam up your bok choy and onion. Pour your
broth and
some green tea overtop of the cooked brown rice (in a bowl). Add an ume plum
and some strips of chopped nori. Top with some steamed bok choy and onions.
