Brysons Best Scramble

Tofu Scramble
1 onion
3 cloves of garlic
1 red pepper
2 tbsp grated ginger
2 blocks of firm tofu
1 head of broccoli
1 zucchini
1 cup chopped crimini mushrooms
4 carrots
1 tbsp corriander seeds
1/4 cup of nutritional yeast
1 tbsp tumeric
a hand full of chopped cilantro
3 tbsp safflower oil
a pinch of cayenne pepper
a large splash of tamari
salt and pepper to taste
Directions:
Start by frying your onions, garlic, mushrooms and corriander seeds in oil,
until the onions become translucent and begin to caramelize. Then crumble
up your tofu and throw in the rest of the veggies and spices. Keep it frying
on
low heat until the tofu becomes crispy and starts to brown up. Enjoy.
